This Spinach & Cheddar Egg Breakfast Sandwich layers fluffy scrambled eggs with vitamin-rich spinach and melted cheddar cheese between two slices of crusty artisan bread. It's the perfect on-the-go breakfast or weekend morning treat.

Ingredients

  • 2 large eggs (100g)
  • 1⁄4 cup baby spinach leaves (15g)
  • 2 slices crusty artisan bread (1 oz each) (56g)
  • 2 tbsp shredded cheddar cheese (28g)
  • 1⁄2 tbsp butter (7g)
  • Salt and pepper to taste


Method

  1. In a small bowl, whisk eggs until uniformly combined and season with salt and pepper. Set aside.
  2. Heat a skillet over medium heat. Melt butter in the skillet. Add spinach and cook for 1 minute until just wilted. 
  3. Pour in eggs. Gently stir and scramble until eggs are softly set but still moist, about 2-3 minutes. 
  4. Assemble sandwich by placing one bread slice in skillet. Top with scrambled eggs, then spinach and cheddar cheese. Cover with second bread slice. 
  5. Toast sandwich in skillet 1-2 minutes per side until bread is golden brown and cheese is fully melted.
  6. Slice in half diagonally and serve warm.
