Ingredients

Salad

  1. 5 cups chopped kale, stems removed (150g)   
  2. 1 avocado, diced (200g)
  3. 1 cup blueberries (150g)
  4. 1 cup shelled edamame (150g)
  5. 1⁄4 cup sliced almonds (25g)

Dressing

  1. 3 tbsp olive oil (45mL)
  2. 2 tbsp lemon juice (30mL)
  3. 1 tsp Dijon mustard
  4. 1 garlic clove, minced
  5. Salt and pepper to taste

Method

  1. In a large bowl, massage the kale for 1-2 minutes until softened and darker in color.
  2. Add the avocado, blueberries, edamame and almonds. Toss gently to combine.
  3. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic and salt/pepper.  
  4. Drizzle dressing over salad just before serving and toss again. Enjoy!

  • Use baby kale for more tender leaves if desired.
  • Let edamame thaw for 10 minutes before adding if frozen.
